Thanks for all the encouragement!

I think I'm over my pity party now. I purchased a glucose monitor yesterday and am testing it out. After lunch yesterday my glucose was 104 which is great! Then, I had a high carb dinner just to test things out and my glucose reading was high. It was still a tiny bit high this morning when I woke up which isn't surprising considering the high carb meal last night. I'm trying to test the limits. This morning I ate a more sensible meal and tried to stay in the 15 grams of carbs range. I'll test again in an hour to see how it goes. I'm most worried about staying on track during our trek across the country. It's easy to pay attention when I'm at home and have access to the foods I need. It's a completely different story when I'm on the road and being tempted by convenience food. We are planning on packing a cooler with water and drinks. I'll probably throw in some fruits and yogurt. Anyone have any other quick and easy ideas for eating healthy on the road?

Packing has come to a complete stall. I'm not sure what happened, but somehow I lost motivation. We're very near the end and tying up all the lose ends has always been my weak spot. I'm at the point where I've done all the major stuff and just want to be through with it already.

Glad your number are down... just keep an eye on it...

When will you be here in Ada and for how long? I want to make sure and be here...Dennis and I are planning a little break... The pool man is due anytime so if they are digging out back we will not be going anywhere till they are finished with that.... but just wanted to know when you would be coming through..

I just read your last two posts. I'm so sorry! But you'll handle it well, I'm sure. Kinda sucky to deal with something else on top of everything you have going on though. I'd have a pity party too.

I am the exact same way about packing. I hate the last minute junk. I am going through boxes right now from when we moved in, and I am finding box after box of random stuff, and have realized that once I got to the place you're at now, I just threw it all into boxes in no particular order. Not the best plan!

wraps -- i make tortillas wraps with chicken, bell peppers, cream cheese, and lettuce, wrap them in cellophane and throw them in cooler. they'll keep for about three days -- longer if you don't use cream cheese. watch the type of yogurts you are buying -- some have as much as 32 grams of sugar in them.

nate always takes jerky and raw almonds.

When Kris and I came to CA last year we did wraps too, but we didn't pre-make them. If you buy a bag of the soft tortilla shells, they travel well because they are flat...and they make them in whole grain. We used turkey and cream cheese. We bought a pack of turkey sandwich meat that could be resealed and just put it in the cooler. You can also buy the cream cheese in the containers, which should work well in a cooler. We didn't necessarily eat nutritious, we were just trying to keep the cost down. We packed plenty of water and bought a jar of nuts at Costco. Karen and I just took a trip to the beach and we packed carrots in a cooler and that worked well too. Also, obviously things like whole apples and fruits like that wouldn't need to be in the cooler.
And, as far as packing...every time I move, I start out good and pack everything into certain boxes and organize it... Then, I get to the last part of it where time is coming near and I have no motivation and I just need to pack it, so everything just gets thrown into a box that it will fit into. I figure I'll sort it out when I get there :) With that said...I'll help you when you get here! I won't be here the week of July 14th because I'm moving, but after that I'll stop down. I'll only be here for about 3 weeks till I'll have to go back to my place for inservices and the start of school for teachers.

hmmm... I'm of no use here. We haven't moved in 25 years so I've pushed all knowledge of packing into a deep recess somewhere and we don't travel, except in the bus and then I have a full kitchen to work with...

You are doing a good job!!! When I move and it is almost time to go sometime I just want to throw things at the truck and hope they fit! It is tiring at the end, espscially when you are PG!

It is harder eating on the road. Look for protien, veges and salads.
